Questions about traveling Scotland and Ireland?

My husband and I are from Canada and are taking our first trip together in Europe for the first 2 weeks in May 2011. 1 week in Scotland, 1 weed in Ireland. We are adventurous, and well equipped for pitching a tent in blowing snow and -30′C weather. (We live in the Canadian Rockies, after all)
Basically, we are wondering if they are safe countries? Is it ok to pull over and pitch a tent to sleep for the night, or do you need to find designated areas for camping?
Can anyone recommend some cheap and affordable cabins to rent? or self catering cottages?

We are really excited about this trip, but it is our first time traveling, and don’t know what we are doing! LOL.
Do you think we would attract the police for camping? Is it illegal to camp in a random field?

I strongly recommend looking into designated campsites, simply for your own safety and security.

I can’t tell you about Scotland, but if you try camping in a random field in Ireland, you could be done for trespassing. Farmers are notoriously sticky about who goes on their land and if you simply camp there without asking permission first, they can and will confiscate your belongings.
